Vegan Fried Rice

Ingredients

  • 1/4 cup + 1 tbsp butter

  • 1 cup JUST egg (whisked with 1/4 tsp kala namak + 1/4 tsp paprika + 1/4 tsp garlic powder + 1/4 tsp onion powder + pinch of salt + pepper)

  • 1 medium red onion, chopped

  • 4 cloves garlic, minced

  • 2 inch knob ginger, minced

  • 2 cups chopped veggies (e.g. carrots, peas, cabbage)

  • 1/8-1/4 tsp white pepper

  • 4.5-5 cups cooled white rice

  • 1/4 cup liquid aminos or soy sauce

  • 2- 2.5 tbsp rice vinegar

  • 1 tbsp sesame oil

Directions

  1. Melt 1 tbsp butter on a nonstick pan. Pour the JUST egg into the pan. Cook over medium-low heat and scramble. Set aside.

  2. Melt 2 tbsp butter in a deep skillet over medium heat. Add onion and cook for a few minutes. Add in garlic and ginger and cook until fragrant (approx 30 seconds).

  3. Add veggies and white pepper and heat until veggies are fully cooked. Add the prepared JUST egg and stir.

  4. Add in cooled rice, soy sauce, rice vinegar, and sesame oil. Mix well.

  5. Increase heat to high and press the rice down into the pan. Cook for a few minutes until the bottom has brown and crispy pieces. Stir rice and then repeat this last step a few times. Remove from heat and serve immediately.
