Easy Vegan Gluten-Free Cornbread

Ingredients

Dry Ingredients
  • vegan butter
  • 1 1/4 cup gluten-free or white flour (I use 1 to 1 Bob's Red Mill)
  • 3/4 cup corn meal
  • 1/4 cup sugar (refined sugar replacements like monkfruit sweetener also work)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp flax
  • optional: vegan butter or maple syrup to top
Wet Ingredients
  • 1 1/4 cup milk
  • 1/4 cup neutral oil

Instructions

  1. Preheat oven to 350F. Grease an 8x8 baking pan with vegan butter and set aside.
  2. Whisk dry ingredients together in a medium bowl. Add wet ingredients and stir with a wooden spoon until just combined.
  3. Add batter to the baking pan and bake for 20-25 minutes or until golden brown.
  4. Serve hot. Enjoy! (Optional: Top with vegan butter and/or a drizzle of maple syrup.)
