I love taking a classic recipe and making it vegan AND gluten-free but still keeping the integrity of the original flavors.

Easy Vegan Gluten-Free Cornbread

Ingredients
Dry Ingredients
- vegan butter
- 1 1/4 cup gluten-free or white flour (I use 1 to 1 Bob's Red Mill)
- 3/4 cup corn meal
- 1/4 cup sugar (refined sugar replacements like monkfruit sweetener also work)
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp flax
- optional: vegan butter or maple syrup to top
Wet Ingredients
- 1 1/4 cup milk
- 1/4 cup neutral oil
Instructions
- Preheat oven to 350F. Grease an 8x8 baking pan with vegan butter and set aside.
- Whisk dry ingredients together in a medium bowl. Add wet ingredients and stir with a wooden spoon until just combined.
- Add batter to the baking pan and bake for 20-25 minutes or until golden brown.
- Serve hot. Enjoy! (Optional: Top with vegan butter and/or a drizzle of maple syrup.)
