Vegan Caesar Salad

Ingredients

Homemade Croutons
  • 4-5 cups chopped fresh bakery bread
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried parsley
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • salt + pepper to taste
Salad
  • 1 large bunch kale
  • freshly squeezed lemon juice
  • 2 cups raw shredded brussel sprouts
  • vegan caesar dressing (my favorite homemade)
  • violife parmesan for garnish, shaved or shredded
Vegan Grated Parmesan
  • 1 cup unsalted sunflower seeds
  • 1/2 cup nutritional yeast
  • 1 tsp garlic powder
  • 1/2-1 tsp salt

Instructions

  1. Preheat oven to 350F. Chop 5 cups of fresh bakery bread into 1" cubes and toss in a bowl with oil, parsley, garlic powder, and paprika. Bake for 15 minutes, flipping halfway. Remove from oven and set aside.
  2. De-stem the kale and chop into bite-sized pieces. Massage with lemon juice and set aside.
  3. Prepare vegan grated parmesan by adding all ingredients to a food processor until fine. Start with only 1/2 tsp salt and add more if needed. Set aside.
  4. To assemble the caesar salad, toss the kale, brussel sprouts, vegan caesar dressing, violife parmesan, homemade croutons, and vegan grated parmesan. Enjoy!
