Gluten-Free Fluffy Crepes

Though these aren't your typical paper-thin crepes, these gluten-free fluffy crepes are out of this world. With the addition of the blueberries and the yogurt, you'll wonder why you aren't eating these every day.

Ingredients

  • 1 cup gluten-free 1 to 1 or all-purpose flour
  • 1/4 cup melted vegan butter
  • 2 cups plant milk, divided
  • 3 tbsp ground flax
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • olive oil or vegan butter
  • 1/2 cup blueberries
  • vegan yogurt
  • maple syrup

Instructions

  1. Blend gluten-free flour, melted vegan butter, 1 cup plant milk, ground flax, maple syrup, and salt until combined. Let rest for a few minutes. Start heating crepe pan with olive oil or vegan butter.
  2. Add remaining 1 cup of plant milk to the blender and blend again. Pour batter onto hot crepe pan and spread evenly in a thin layer. If the batter sits for too long, you may need to add more milk. Grease pan as needed and only flip when fully cooked, as gluten-free flour is very sticky.
  3. On a separate pan, start heating blueberries with a few splashes of water. When soft, lightly smash and add more water if desired.
  4. Serve crepes with heated blueberries, vegan yogurt, and maple syrup.
