Mint Fudge Truffles

These truffles are unbelievably fudgy and sweet. Best part is that they come together in minutes!

Ingredients

  • 1 cup pitted dates (approx 12-14 medjool dates)
  • 4 tbsp coconut oil, melted
  • 3 tbsp cacao or cocoa powder
  • 1/4 cup walnuts
  • 1/4 tsp mint extract
  • large pinch of sea salt
  • 1/2 cup chocolate chips or chopped chocolate
  • 1 tbsp coconut oil
  • optional: flaky sea salt

Instructions

  1. Soak dates in hot water for a few minutes or until soft. Drain. Blend all ingredients except melted chocolate in a food processor until a stick batter forms.
  2. Form batter into 1' balls and place on a plate (parchment paper optional). The batter will be very sticky and messy. Place plate in freezer uncovered for 1 hour.
  3. Prepare melted chocolate by melting the chocolate and coconut oil in a double-broiler.
  4. Remove truffles from the freezer and dip in the melted chocolate. Let excess chocolate drip off and put back on parchment paper. Optional: Top with flaky sea salt.
  5. These are able to be served immediately once chocolate hardens (can speed this up in the freezer for a few minutes). Leave in the freezer for at least an hour for best results. Store in the freezer. Enjoy!
