Blueberry Lemon Jam Spread
This tart blueberry lemon spread is perfect for yogurt, toasts, pancakes, vegan cheese on crackers, and more!

Ingredients
- 1/2 cup blueberries
- 1 tbsp freshly squeezed lemon juice
- 4 tbsp water
- optional: maple syrup or sugar
Instructions
- Heat blueberries over medium-high heat until soft and the color starts to deepen. Add lemon juice and 2 tbsp water.
- Lightly smash blueberries with a fork until some of the juices come out. Taste and add optional sweetener and/or more water if needed.
- Use on toasts, pancakes, in yogurt, or with vegan cheese on crackers. The possibilities are endless! Enjoy!
