Easy Vegan Falafel

Ingredients

  • 1 can chickpeas (garbanzo beans), drained, rinsed, and mostly dried

  • 1/2 cup oats

  • 1/2 small onion, roughly chopped

  • 2 garlic cloves, minced

  • 1/4 cup packed cilantro, roughly chopped

  • 2 tsp lemon juice

  • 2 tsp olive oil

  • 1/4 tsp coriander

  • 1/4 tsp cumin

  • pinch of salt and pepper

Directions

  1. In a food processor, pulse chickpeas, oats, onion, garlic, and cilantro. Add remaining ingredients and pulse.

  2. In a medium skillet, heat a thick layer of oil. Form small falafel patties and fry until browned on both sides.
