Easy Vegan Falafel

Ingredients
1 can chickpeas (garbanzo beans), drained, rinsed, and mostly dried
1/2 cup oats
1/2 small onion, roughly chopped
2 garlic cloves, minced
1/4 cup packed cilantro, roughly chopped
2 tsp lemon juice
2 tsp olive oil
1/4 tsp coriander
1/4 tsp cumin
pinch of salt and pepper
Directions
In a food processor, pulse chickpeas, oats, onion, garlic, and cilantro. Add remaining ingredients and pulse.
In a medium skillet, heat a thick layer of oil. Form small falafel patties and fry until browned on both sides.
