Loaded Peanut Butter Granola

Ingredients

  • Dry:

    • 2 cups oats

    • 1 cup roughly chopped walnuts

    • 1/2 cup unsweetened coconut flakes

    • 1/2 cup dried fruit of choice (cranberries or raisins recommended)

    • 1/4 cup raw pepitas (pumpkin seeds)

    • 2 tbsp chia seeds

    • 2 tbsp flax seeds

    • optional: chocolate chips (measure with your heart)

  • Wet:

    • 1/2 cup peanut butter

    • 1/2 cup maple syrup

Directions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.

  2. In a medium bowl, combine dry ingredients. Add wet ingredients and stir until all oats are covered. Pour mixture on the baking sheet and bake for 10 minutes or until golden brown.

  3. Enjoy warm or wait until it cools and serve it with your favorite plant-based yogurt or milk and fruit.
