Zoodles w/ Raw Alfredo Sauce

Ingredients

  • 5-6 large zucchini

  • 1/2 tsp salt

  • 1 cup raw cashews, soaked overnight or in hot water for 30 minutes, and drained

  • 1 cup water

  • 1/4 cup nutritional yeast

  • 1 tbsp white miso paste

  • 2 tbsp lemon juice

  • 3-4 garlic cloves

  • salt + pepper to taste

  • optional toppings: veggies, fresh herbs, black pepper, red pepper flakes

Directions

  1. Spiralize the zucchini into noodle shapes to form the zoodles. Sprinkle 1 tsp salt over them and set aside.

  2. In a high powered blender, blend cashews, water, nutritional yeast, miso paste, lemon juice, garlic, salt, and pepper, until smooth and creamy. Set aside.

  3. Dab the zoodles with a paper towel to remove the excess moisture. Add the cashew sauce to the zoodles and combine. Top with optional toppings and serve. Enjoy!
