Zoodles w/ Raw Alfredo Sauce

Makes | approx 6 cups zoodles
Ingredients
5-6 large zucchini
1/2 tsp salt
1 cup raw cashews, soaked overnight or in hot water for 30 minutes, and drained
1 cup water
1/4 cup nutritional yeast
1 tbsp white miso paste
2 tbsp lemon juice
3-4 garlic cloves
salt + pepper to taste
optional toppings: veggies, fresh herbs, black pepper, red pepper flakes
Directions
Spiralize the zucchini into noodle shapes to form the zoodles. Sprinkle 1 tsp salt over them and set aside.
In a high powered blender, blend cashews, water, nutritional yeast, miso paste, lemon juice, garlic, salt, and pepper, until smooth and creamy. Set aside.
Dab the zoodles with a paper towel to remove the excess moisture. Add the cashew sauce to the zoodles and combine. Top with optional toppings and serve. Enjoy!
