Classic Vegan Peanut Butter Cookies

Ingredients

  • Wet ingredients:

    • 1/2 cup vegan butter (have it sit out for 10-15 minutes)

    • 1 cup peanut butter

    • 2 tbsp water

    • 1/2 cup brown sugar

    • 1/2 cup sugar

    • 1/2 tsp vanilla extract

  • Dry Ingredients:

    • 1 1/4 cups flour

    • 1/2 tsp baking powder

    • 1/2 tsp baking soda

    • 1/4 tsp salt

    • 1 tbsp ground flax

Directions

  1. Preheat oven to 350F. Prep large baking sheet with parchment paper. Set aside.

  2. In a large mixing bowl, beat butter and the remaining wet ingredients together until thoroughly combined. In the same bowl, add all dry ingredients and mix until just combined.

  3. With a 1 tbsp measuring spoon or cookie scooper, scoop the cookie dough and roll into a ball. Place on baking sheet and smash down once with palm so the cookie flattens. Press a fork down twice, forming a criss-cross pattern. Repeat with each cookie.

  4. Bake cookies for 10 minutes. Remove from oven and let cool for a few minutes. Enjoy!
