Vegan Buffalo Chicken Dip

Prep time: 10 MinCook time: 25 MinTotal time: 35 Min

Ingredients

  • 1 8 oz container vegan cream cheese, room temperature (see notes)
  • 1/2 cup buffalo wing sauce (usually creamier and milder than a traditional hot sauce)
  • 1/2 cup vegan ranch
  • 1 cup vegan cheddar cheese, plus more to top (optional)
  • 1/2 cup thinly sliced scallions
  • 1/2 cup thinly sliced celery
  • 1 bag daring chicken (roughly 2 cups shredded)

Instructions

  1. Preheat oven to 350F. Cook the vegan chicken according to package directions. Shred or slice thinly and set aside.
  2. In a medium bowl, beat the cream cheese with a spoon until soft.
  3. Add hot sauce and vegan ranch and mix well.
  4. Add cheese, scallions, celery, and vegan chicken and mix well. Taste and add more spice if needed.
  5. Add dip to an 8x8 baking pan (optional: top with additional cheese) and bake for 25-30 min.

Notes

*I recommend Kite Hill cream cheese. I've tried many other brands for this recipe and they do not do the trick.

The cream cheese and cheddar cheese will determine the thickness and affect the flavor, so don’t use a brand you hate! Some vegan cream cheeses and cheeses melt and get thin and oily, while others maintain their “shape” and keep the dip thick.

You’ll want to use a vegan chicken brand you like, and if you can find pieces that are not breaded that would be the best.
