Savory Chickpea Pancake

This savory chickpea pancake has become a staple around my house. It’s super versatile; you can add any veggies and any flavor hummus that you’d like. This can be eaten for breakfast, lunch, or dinner, it’s really up to you when you prefer to eat it!

Can you use canned chickpeas instead of chickpea flour?

Unfortunately you cannot use canned chickpeas for this recipe. However, you would be able to make your own chickpea flour from dried chickpeas.

Savory Chickpea Pancake

Ingredients

Chickpea pancake
  • 1/2 cup chickpea flour
  • 1/2 cup water, plus more if needed
  • 2 tbsp nutritional yeast
  • 1/4 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • pinch of salt + pepper
  • optional: pinch of chili powder or red pepper flakes
Toppings
  • 2-4 tbsp hummus
  • 1/2 cup beans (i.e. black, kidney, cannellini, etc.)
  • 2 cups mixed vegetables* (i.e. broccoli, bell pepper, onion, spinach, mushrooms, etc.)
  • olive oil
  • optional: any sauce (i.e. chipotle mayo, BBQ sauce, ketchup)

Instructions

  1. Sautee the mixed vegetables with a splash of olive oil over medium-high heat until fully cooked. Add beans and reduce heat to simmer while you prepare the chickpea pancake.
  2. Whisk the chickpea pancake ingredients in a small bowl.
  3. Pour batter on small nonstick skillet on cook over medium-low heat for 3-5 minutes or until almost completely cooked. Flip and continue cooking for 1 minute. Remove from heat.
  4. Place chickpea pancake on a plate. Spread hummus on top and pile with veggies and optional sauce. Serve hot. Enjoy!
