Sweet Potato Black Bean Taquitos

What is a taquito?

A taquito is a rolled tortilla with filling inside. Basically like a rolled taco! Traditional Mexican taquitos are made from corn tortillas (though for a quicker or easier recipe I’ve opted for flour tortillas) and are typically filled with some type of shredded meat. I have a recipe for shredded jackfruit taquitos that take on a more traditional flavor profile, but this recipe features one of my favorite flavor combinations: sweet potato and black bean.

What is the difference between a taco and a taquito?

Tacos and taquitos have many similarities: the tortilla, the filling, and the toppings. However, taquitos are rolled tortillas with the filling inside, all already cooked, with the toppings either put on top or saved for dipping. The tortillas for tacos can be cooked or uncooked and the fillings and toppings go inside of the taco. Tacos also usually have more variety as far as the fillings and the toppings go, but both are still very similar. Of course, when making taquitos or tacos, you can choose to not make them traditionally, and then there is room for variety in both of the dishes.

How do you eat taquitos?

If you want to eat taquitos as an appetizer, I’d suggest minimally topping the taquitos and keeping most of the sauces and salsas on the side. If you want to eat taquitos as a meal, eat over lettuce and pile on the toppings, making sure to load up on the guacamole, obviously.
