Vegan Chickpea Burger

Ingredients

  • 1 cup walnuts

  • 1 cup oats

  • 2 tbsp chia seeds + 5 tbsp water

  • 1 can chickpeas (garbanzo beans), drained

  • 1 small onion, roughly chopped

  • 4 garlic cloves, minced

  • 2 tbsp vegan Worcestershire sauce

  • 1 tbsp taco seasoning

  • salt + pepper to taste

  • 1 tsp olive oil

  • Your favorite burger toppings

  • Your favorite burger bun

Directions

  1. In a food processor, blend walnuts and oats until fine. While those are blending, combine chia seeds and water and let sit for 5 minutes. Add in remaining ingredients except olive oil (adding the chia mixture last) and blend until a dough forms. The dough will seem sticky.

  2. On a medium nonstick skillet, heat 1 tsp olive oil. Form chickpea batter into small patties and cook each side over medium heat for a few minutes or until they start to brown.

  3. Serve burgers hot on your favorite toasted burger bun with your favorite burger toppings.
