Vegan Mac 'n' Cheese

Ingredients

  • 1 lb pasta (can be gluten-free)

  • 1 stick + 2 tbsp vegan butter

  • 8 oz vegan cream cheese

  • 1 large sweet potato, chopped

  • 1-2 cups plant milk

  • 1/2 cup nutritional yeast

  • 1/4-1/2 tsp white pepper

  • 1/4-1/2 tsp cayenne (leave out if sensitive to spice)

  • 2 tbsp tomato paste

  • 1 tsp garlic powder

  • 1/2-1 tsp salt

Directions

  1. Prep pasta according to package directions. Set aside. In a separate pot, add sweet potato to boiling water and cook until soft. Remove from heat and set aside.

  2. While pasta and sweet potatoes are cooking, melt 1 stick of butter in a large pot over low-medium heat.

  3. Add 2 tbsp of butter to the sweet potatoes and smash with a masher, a fork, or a blender. Add to the pot with the melted butter, along with the cream cheese.

  4. Add the remaining ingredients. Add more milk if needed and adjust seasonings to taste. Stir in pasta until hot and serve immediately. Enjoy!
