What type of vinegar should you use for pickled red onions?

I’ve seen and tried many different kinds of vinegar for pickled red onions, including distilled white vinegar, apple cider vinegar, red wine vinegar, white wine vinegar, etc. I’ve chosen to use red wine vinegar because of the depth it adds to the recipe, as opposed to just being there as a background or unnoticeable flavor.

Ingredients

  • 1 large red onion
  • 1 cup red wine vinegar
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tbsp agave or maple syrup

Instructions

  1. Thinly slice the red onion. Place in a glass jar and add remaining ingredients. Shake until fully combined. Seal tight and let sit for a few hours or overnight in the refrigerator.
