Veggie Bagel Sandwich

Makes | 1 bagel sandwich
Ingredients
2 tsp olive oil
1/4 white or red onion, thinly sliced
handful of oyster mushrooms, shredded/pulled
2 tsp Worcestershire sauce
splash of liquid smoke
salt + pepper to taste
1/2 cup JUST egg
pinch of smoked paprika
pinch of garlic powder
pinch of onion powder
large pinch of kala namak (black salt - for eggy flavor)
handful of alfalfa sprouts
1/4 of an avocado, sliced
1 bagel (I use @hotforfood recipe)
optional: chipotle aioli
Directions
Heat 1 tsp olive oil in a nonstick skillet over medium-high heat. Add onion and cook for two minutes. Add mushrooms, Worcestershire sauce, liquid smoke, and salt and pepper. Cook for a few minutes.
In a small bowl, whisk JUST egg, smoked paprika, garlic powder, onion, kala namak, salt, and pepper.
In a separate nonstick skillet, heat 1 tsp olive oil. Add JUST egg mixture and cook over low-medium heat for 5-6 minutes. Stir frequently.
Toast your bagel. Top bagel with chipotle aioli (optional), mushroom and onion mixture, scrambled vegan egg, alfalfa sprouts, and avocado. Enjoy!
