Veggie Bagel Sandwich

Ingredients

  • 2 tsp olive oil

  • 1/4 white or red onion, thinly sliced

  • handful of oyster mushrooms, shredded/pulled

  • 2 tsp Worcestershire sauce

  • splash of liquid smoke

  • salt + pepper to taste

  • 1/2 cup JUST egg

  • pinch of smoked paprika

  • pinch of garlic powder

  • pinch of onion powder

  • large pinch of kala namak (black salt - for eggy flavor)

  • handful of alfalfa sprouts

  • 1/4 of an avocado, sliced

  • 1 bagel (I use @hotforfood recipe)

  • optional: chipotle aioli

Directions

  1. Heat 1 tsp olive oil in a nonstick skillet over medium-high heat. Add onion and cook for two minutes. Add mushrooms, Worcestershire sauce, liquid smoke, and salt and pepper. Cook for a few minutes.

  2. In a small bowl, whisk JUST egg, smoked paprika, garlic powder, onion, kala namak, salt, and pepper.

  3. In a separate nonstick skillet, heat 1 tsp olive oil. Add JUST egg mixture and cook over low-medium heat for 5-6 minutes. Stir frequently.

  4. Toast your bagel. Top bagel with chipotle aioli (optional), mushroom and onion mixture, scrambled vegan egg, alfalfa sprouts, and avocado. Enjoy!
