Ingredients
- 400g penne
- 1/4 cup olive oil
- 1 head garlic, minced
- 1 tbsp crushed red pepper flakes (crush more using mortar & pestle or chopping)
- 800g (ish) canned peeled tomatoes
- 1 tsp salt
- 1 tsp black pepper
- 1 handful of fresh parsley
- optional: parmesan and more parsley to top
Instructions
- Prepare penne according to package instructions. Set aside.
- Add oil to a hot pan over high heat. After 1-2 minutes, add minced garlic and red pepper flakes (extra crushed). Stir and cook for 2 minutes.
- Crush tomatoes between your fingers when adding to the pan. Add salt, pepper, and parsley. Cook for 5-10 minutes over medium heat.
- Stir in pasta. Serve and top with optional parmesan and extra parsley.
