Creamy Butternut Pasta
Creamy butternut pasta is the perfect dish to warm you up on a chilly evening. With its rich flavors and smooth texture, this simple recipe combines roasted butternut squash with onion and red bell pepper to create a delightful sauce that coats your favorite pasta. Ingredients
- 1/2 small butternut squash
- 3 small onions
- 1 red pepper
- optional: 1/2 cup cashews for extra creaminess
- 16 oz pasta
- optional: your favorite pasta toppings (i.e. parsley, parmesan, etc.)
Instructions
- Preheat oven to 400F.
- Chop the butternut squash, onion, and pepper. Roast on a sheet pan until soft, approximately 15 minutes.
- While the veggies are roasting, prepare pasta. Drain and add back to pot. Set aside.
- Add veggies (and optional cashews) to high-speed blender with enough water to almost cover. Blend until smooth.
- Pour butternut sauce over the pasta and mix. Add any of your favorite pasta toppings. Enjoy!
Notes
If you do not have a high-speed blender and you are choosing to add cashews to the sauce, cover with hot water for 30 minutes prior to adding to the blender.
