Creamy Butternut Pasta

 

Creamy butternut pasta is the perfect dish to warm you up on a chilly evening. With its rich flavors and smooth texture, this simple recipe combines roasted butternut squash with onion and red bell pepper to create a delightful sauce that coats your favorite pasta. It not only brings the essence of fall to your table, but it's also quick and easy to make!

Creamy Butternut Pasta

Ingredients

  • 1/2 small butternut squash
  • 3 small onions
  • 1 red pepper
  • optional: 1/2 cup cashews for extra creaminess
  • 16 oz pasta
  • optional: your favorite pasta toppings (i.e. parsley, parmesan, etc.)

Instructions

  1. Preheat oven to 400F.
  2. Chop the butternut squash, onion, and pepper. Roast on a sheet pan until soft, approximately 15 minutes.
  3. While the veggies are roasting, prepare pasta. Drain and add back to pot. Set aside.
  4. Add veggies (and optional cashews) to high-speed blender with enough water to almost cover. Blend until smooth.
  5. Pour butternut sauce over the pasta and mix. Add any of your favorite pasta toppings. Enjoy!

Notes

If you do not have a high-speed blender and you are choosing to add cashews to the sauce, cover with hot water for 30 minutes prior to adding to the blender.
