9-Layer Tex-Mex Dip

This is my mom’s famous 9-layer dip that she originally got from a recipe card on the back of a package she used to buy. However, it called for 1 avocado, so let’s just say she’s taken some creative liberties over the years. I’ve veganized it and made the olives optional (I’m honestly not a huge fan) and gave some suggestions and alternatives to make this recipe more accessible and more customizable.

You can serve this at parties or on game day, or make it for the family for dinner.

 
 

What’s in 9-layer dip?

This dip hits all of your dip wishes with it’s creamy, crunchy, fresh, and tangy ingredients. It starts off with refried beans, then a vegan sour cream or crema mixed with taco seasoning, mild or spicy green chilies, avocados or guacamole (I recommend this recipe), onion, bell pepper, tomatoes, olives, and chili powder to top.

Is this dip spicy?

Depending on the type of chilies you bought and the amount of chili powder you add, it could be spicy. However, if you’re looking for a significant kick, adding fresh or pickled hot jalapenos would do the trick!

Is this Mexican?

Though most label these types of dips Mexican due to the beans and other ingredients Mexicans use often, the dip has roots in Tex-Mex cuisine and is not authentic to Mexican culture.

Ingredients

  • 28-30 oz refried beans (I prefer Ducal brand)
  • 16 oz vegan sour cream
  • 1/4 cup taco seasoning
  • 2 4-oz can green chilies (mild or spicy)
  • 5-6 avocados, smashed (alternative: guacamole)
  • optional: salt, pepper, freshly squeezed lime or lemon juice
  • 1 large onion, finely chopped
  • 2 green bell peppers, finely chopped
  • 2-3 cups finely chopped roma tomatoes (approx 4 large roma tomatoes)
  • 1 can olives (optional)
  • 1-2 tbsp chili powder (or to taste)
To dip
  • Tortilla chips
  • Crispy plantain chips

Instructions

Spread the ingredients in a large servings dish (approx 9x13in.) one layer at a time in this order:
  1. Refried beans
  2. Vegan sour cream mixed with taco seasoning
  3. Green chilies
  4. Smashed avocados (with optional salt, pepper, lime/lemon juice) or guacamole
  5. Chopped onion
  6. Chopped bell pepper
  7. Chopped tomatoes
  8. Olives (optional)
  9. Chili powder
