Vegan Churro Swirls
These are sort of in between churros and cinnamon rolls, but I’m settling on the name churro swirls because of the melted butter and cinnamon sugar topping. Plus, this texture is a little more similar to churros, and cinnamon rolls are soft and fluffy.

Ingredients
- 1 sheet of vegan puff pastry
- 1/4 cup vegan butter, softened to room temperature
- 1/4 cup vegan butter, melted
Cinnamon sugar
- 1/4 cup granulated or coconut sugar
- 1 tbsp cinnamon
Instructions
- Preheat oven to 350F. Prep baking sheet with parchment paper. Set aside.
- Thaw one sheet of puff pastry until soft enough to use, but not completely warm.
- Sprinkle some flour on a clean surface (i.e. counter or parchment paper) so the pastry doesn't stick. Place the puff pastry down on your surface and roll it out so that there aren't any folds and the sheet gets a little bit longer.
- Spread a layer of vegan butter on the pastry dough with a butter knife.
- Combine the sugar and cinnamon in a small bowl and sprinkle it over the dough.
- Cut the sheet of pastry into 8-10 strips, depending on what thickness you want.
- Take the first piece and twist it from either end. Then twirl it around in a circle and tuck the edge underneath to "seal" the swirl. Continue until all swirls are complete. Place on baking sheet and bake for 15-20 minutes.
- Remove the baking sheet from the oven and, with a pastry brush, carefully brush each swirl with the melted butter. Then top with additional cinnamon sugar. Serve hot. Enjoy!
