Vegan Coffee Cake
This is a delicious coffee cake recipe that everyone will fall in love with. It’s moist, perfectly soft, just the right amount of sweetness, and it’s the best warm served with a cup of coffee (or hot chocolate, your choice).

Why is it called coffee cake if there isn’t any coffee?
The name comes from the fact that it’s a standard baked good that’s typically served with coffee.
Is coffee cake the same thing as crumb cake?
While both of these cakes have a lot of similarities in texture and flavor, crumb cake has a much thicker streusel topping.
How can I make my baked goods more moist?
There is nothing yummy about a dry or dense cake — at least not to me. So I try to make my baked goods as moist as possible. In this recipe I’ve used yogurt and oil to provide as much moisture to the recipe as possible. Also make sure to mix until just combined because overmixing will lead to a dry baked good, and don’t over bake (baked goods continue cooking once removed from the oven up until they start to cool).
Vegan Coffee Cake
Ingredients
- 1 1/2 cups plant milk
- 1 cup vegan yogurt (unsweetened vanilla or plain)
- 2 tbsp apple cider vinegar
- 4 cups flour
- 1 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup oil
- 1 tbsp maple syrup
- 1 cup chopped walnuts
- optional: oil spray
- 1 cup brown sugar
- 1/2 cup flour
- 3 tbsp maple syrup
- 1 tsp cinnamon
- pinch of salt
- 1/2 cup finely chopped walnuts
Instructions
- Preheat oven to 325F. Coat 9x12 baking pan or classic bundt pan with thin layer of oil or vegan butter. Set aside.
- In a medium bowl, combine milk, yogurt, and apple cider vinegar. Whisk and set aside.
- Prepare cinnamon sugar topping by mixing all ingredients in a small bowl until just combined. Leave bigger chunks to resemble a crumb topping.
- In a large bowl, combine flour, sugar, baking powder, and salt. Whisk and then add oil, maple syrup, and milk mixture. Mix with a wooden spoon until combined. Fold in walnuts.
- Pour half of the batter in the prepared baking sheet and spread out. Add 1/3 of the cinnamon mixture on top, then add remaining batter and then the remaining cinnamon mixture on top. (Optional: spray top of the cake with oil for crispier and browner bits.)
- If using a baking pan, bake for 40-45 minutes. If using a bundt pan, bake for 55-60 minutes. Test with a toothpick to make sure the batter is not completely runny*. Remove from oven and let cool. Enjoy!
Notes
*After you remove the cake from the oven it will continue to cook, so don't be concerned if it seems like it could use a few more minutes in the oven. You definitely don't want a dry coffee cake, so don't overbake!
