Summer Peach Salsa
The key to this recipe is sourcing the freshest produce possible — if you have a local farm near you, please go support them. Not only does it help their keep their business alive but I guarantee you the fruits and veggies will taste a million times better because they’re so fresh!
Although I have written out measurements, I encourage you to use those as a base and measure with your heart! If you’re feeling like you want more of a kick, add more jalapeno. If you want it to be a sweeter salsa, add more peaches or less tomatoes. Tailor it to your taste buds.
Do yourself a favor and pair this peach salsa with vegan goat cheese or vegan fresh mozzarella (burrata) on toast. Then try to tell me it’s not the most addicting combination ever!
Add in the lime juice, balsamic vinegar, oil, salt, and pepper, and watch this salsa come to life. The longer you let it sit and marinate, especially while chiling, the more the flavors will all come together. (Not to say this is necessary though.)
Summer Peach Salsa
Ingredients
- 1 1/2 cups chopped peaches
- 1 cup sliced cherry tomatoes
- 1/2 cup finely diced red onion
- 1/4 cup chopped or sliced cucumber
- 1/4 cup fresh basil, thinly sliced
- 1/2-1 fresh jalapeño, finely diced
- 2 tbsp freshly squeezed lime juice
- 1 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
Instructions
- Cut peaches, tomatoes, red onion, cucumber, basil, and jalapeño, and add to a medium mixing bowl.
- Add lime juice, balsamic vinegar, olive oil, salt, and pepper. Carefully toss all ingredients until combined. Serve immediately or refrigerate until serving. Enjoy!
