Loaded Sun Butter Shake

I really don’t know if this counts as breakfast or dessert but either way I’m here for it.

I have been dreaming about making a smoothie like this for a very long time and I’m so happy I finally had the chance to do it. I typically don’t have a ton of frozen bananas on hand because everyone in my house drinks smoothies every day, so I’m usually limited to 1 banana to be polite. But with everyone out of the house I was able to indulge and make this yummy treat!

The mix-ins are totally customizable, but I do love this combination so much that I would recommend using those ingredients if you don’t have any other ideas.

Make sure to freeze the bananas overnight, otherwise this smoothie will be thin and not as creamy and delicious!

Make sure to read the directions and blend the smoothie ingredients first otherwise you’ll come up with a very sweet shake that probably will be too rich to finish.

Ingredients

  • 2 1/2-3 frozen bananas
  • handful of ice
  • 1/2 cup full-fat coconut milk
  • 3 pitted medjool dates
  • 1 tbsp sunflower seed butter or peanut butter
  • splash of vanilla
Mix-Ins:
  • pretzels
  • edible cookie dough
  • chocolate sandwich cookies
  • extra sun butter

Instructions

  1. Blend smoothie ingredients until creamy. Add in mix-ins and slowly blend for a few seconds until incorporated (should have chunks left). You can also crush these by hand and mix with a spoon if you don't want any mix-ins blended.
  2. Optional: Smear sun butter on the glass you're drinking from before pouring smoothie into glass.
