Vegan Hearts of Palm Ceviche

Ingredients
1 jar (14.5 oz) hearts of palm
1 cup sliced cucumber
1.5 cups chopped tomato
1/2 cup chopped or sliced red onion
1/2 cup cilantro
1/2 large avocado, cubed
1/4 cup lime juice
1/2-1 tbsp hot sauce
salt and pepper to taste
Directions
Drain the hearts of palm. Cut each piece in half lengthwise and then slice into pieces (not too thin).
In a medium bowl, add all of the ingredients. Adjust seasonings to taste.
Use as a dip with chips, top over nachos, throw it in to tacos, etc. Enjoy!
