Vegan Hearts of Palm Ceviche

Ingredients

  • 1 jar (14.5 oz) hearts of palm

  • 1 cup sliced cucumber

  • 1.5 cups chopped tomato

  • 1/2 cup chopped or sliced red onion

  • 1/2 cup cilantro

  • 1/2 large avocado, cubed

  • 1/4 cup lime juice

  • 1/2-1 tbsp hot sauce

  • salt and pepper to taste

Directions

  1. Drain the hearts of palm. Cut each piece in half lengthwise and then slice into pieces (not too thin).

  2. In a medium bowl, add all of the ingredients. Adjust seasonings to taste.

  3. Use as a dip with chips, top over nachos, throw it in to tacos, etc. Enjoy!
