Classic Creamy Vegan Coleslaw

Ingredients

  • 6 cups thinly sliced cabbage

  • 1/2-1 white onion, thinly sliced

  • 1/2 cup vegan ranch

  • 2 tbsp apple cider vinegar

  • 1/4 cup freshly chopped herbs (i.e. cilantro, parsley, dill)

  • salt and pepper to taste

Directions

  1. Combine all ingredients in a large bowl and toss until fully combined. Adjust seasonings. Holds well in the fridge for up to 2 days.
