Ingredients
6 cups thinly sliced cabbage
1/2-1 white onion, thinly sliced
1/2 cup vegan ranch
2 tbsp apple cider vinegar
1/4 cup freshly chopped herbs (i.e. cilantro, parsley, dill)
salt and pepper to taste
Directions
Combine all ingredients in a large bowl and toss until fully combined. Adjust seasonings. Holds well in the fridge for up to 2 days.
