Vegan Vodka Sauce (Oil-Free)

Ingredients

  • 1 cup raw cashews

  • 1/2 cup water

  • 1/2 cup vodka

  • 1 jar (24 oz) tomato sauce

  • 5-8 large cloves garlic

  • 1/2 tsp salt

  • 1/4-1/2 tsp black pepper

  • 1/4-1/2 tsp red pepper flakes

Directions

  1. Soak cashews overnight or in hot water for 30 minutes. Skip this step if you have a high-speed blender.

  2. Add all ingredients to the blender and blend on high until creamy.

  3. Add to a pot and cook over medium heat for 15-20 minutes. Add more water until desired consistency is reached, approximately 1/2 cup at a time.

  4. Serve with your favorite pasta (approx 1 lb).
