Vegan Vodka Sauce (Oil-Free)
Ingredients
1 cup raw cashews
1/2 cup water
1/2 cup vodka
1 jar (24 oz) tomato sauce
5-8 large cloves garlic
1/2 tsp salt
1/4-1/2 tsp black pepper
1/4-1/2 tsp red pepper flakes
Directions
Soak cashews overnight or in hot water for 30 minutes. Skip this step if you have a high-speed blender.
Add all ingredients to the blender and blend on high until creamy.
Add to a pot and cook over medium heat for 15-20 minutes. Add more water until desired consistency is reached, approximately 1/2 cup at a time.
Serve with your favorite pasta (approx 1 lb).
