Vegan Sausage Tortellini Soup

Ingredients

  • 2 packs hot Italian sausage (I use Beyond Meat)

  • 2 large onions, chopped

  • 7-8 large cloves garlic, minced

  • 2 tbsp olive oil

  • 3 large carrots, sliced

  • 6 oz (1 small can) tomato paste

  • 1 cup milk

  • 1 cup sour cream

  • 5 cups veggie broth

  • 6 cups water or veggie broth

  • 1-2 tsp salt

  • 1/2-1 tsp red pepper flakes

  • 1 /4-1 tsp freshly cracked black pepper

  • 1/4-1/2 tsp thyme

  • 1-2 tbsp parsley

  • 2-3 handfuls of chopped or shredded greens (i.e. kale, bok choy, collard, spinach, cabbage, etc.)

  • 2 cups vegan tortellini

Directions

  1. Crumble and cook the vegan sausage in a large pot. Remove from pot. Add onions, garlic and olive oil. Cook over low-medium heat.

  2. After 10 minutes, add carrots and tomato paste. Thoroughly mix. Add milk and sour cream. Mix. Add veggie broth, water, and seasonings. Whisk and adjust seasonings. Heat 30 minutes.

  3. Add greens, cooked sausage, and tortellini. Heat for five minutes over medium heat or until greens are slightly wilted. Serve hot. Enjoy!
