Sweet Potato Black Bean Tacos

Makes | 6-8 tacos
Ingredients
6-8 small tortillas
2 large sweet potatoes
1/2 tsp paprika
1/2 tsp smoked paprika
1 tsp cumin
1 tsp chili powder
1 can (15 oz.) refried beans (Ducal black or red beans recommended)
Optional toppings:
Handful of chopped cilantro
Lime wedges
Chipotle mayo
Guacamole:
2 avocados
2 tbsp lime juice (approx. 1 lime)
2 tbsp chopped fresh cilantro
3 tbsp chopped red onion
1/4 tsp heaping garlic powder
generous pinch of salt
2 pinches chili powder
Directions
Preheat oven to 375F. Bake sweet potatoes until soft (approx 45 minutes). Adjust the oven temperature to broil.
Prep the guacamole: Mash the avocados and mix in the remaining ingredients.
When sweet potatoes are ready, transfer them to a nonstick pan over medium heat. Add paprika, smoked paprika, cumin, chili powder. Roughly smash with a fork.
Prep the tacos: spread 2 tbsp of refried beans on each tortilla. Add 1/4 cup sweet potatoes on top.
Place tacos on baking sheet lined with parchment paper and stand up the tortillas against each other so they don't lay flat. Broil the prepped tacos for 3-4 minutes until thoroughly heated or crispy if desired.
When the tacos are warm, take them out of the oven and top with guacamole, chipotle mayo, cilantro leaves, and lime wedges. Enjoy!
