Vegan Jalapeño Poppers

Ingredients

  • 10-15 small/medium jalapeño peppers

  • 16 oz herb plant-based cream cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp smoked paprika

  • generous pinch of white pepper

  • generous pinch of salt

  • 1/3 cup (packed) chopped scallions

  • 1/4-1/2 cup gluten-free bread crumbs

  • 2 tbsp nutritional yeast (optional)

Directions

  1. Preheat oven to 400 degrees F. Cut the jalapeños lengthwise*. Scoop out the insides and remove all seeds.

  2. In a small bowl, mix cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Fold in scallions.

  3. Scoop cream cheese mixture into jalapeños. Top with bread crumbs**.

  4. Bake for 20-25 minutes until jalapeños are darker and wrinkled. Broil for 2-3 minutes to brown the tops.

  5. Remove from oven. Serve immediately!
