Lemon Dill Carrots

 

These lemon dill carrots are the perfect side dish for any holiday dinner or honestly just for a snack on a normal day.

Lemon Dill Carrots

Ingredients

  • 1 lb carrots
  • 1 lemon
  • olive oil
  • salt + pepper
  • 1/4 cup chopped fresh dill

Instructions

  1. Preheat oven to 425F.
  2. Cut carrots in thick strips*. Add to baking sheet and toss with 1/2 squeezed lemon, olive oil, salt, and pepper.
  3. On a nonstick baking sheet, roast carrots until preferred texture, approximately 15 minutes.
  4. Remove from oven and toss with remaining 1/2 squeezed lemon and dill. Taste and add more salt and pepper if needed.

Notes

Keep in mind carrots will shrink while roasting.
