Lemon Dill Carrots
These lemon dill carrots are the perfect side dish for any holiday dinner or honestly just for a snack on a normal day.

Lemon Dill Carrots

Ingredients
- 1 lb carrots
- 1 lemon
- olive oil
- salt + pepper
- 1/4 cup chopped fresh dill
Instructions
- Preheat oven to 425F.
- Cut carrots in thick strips*. Add to baking sheet and toss with 1/2 squeezed lemon, olive oil, salt, and pepper.
- On a nonstick baking sheet, roast carrots until preferred texture, approximately 15 minutes.
- Remove from oven and toss with remaining 1/2 squeezed lemon and dill. Taste and add more salt and pepper if needed.
Notes
Keep in mind carrots will shrink while roasting.
