Vegan Pumpkin Protein Pancakes

Ok yes, I know the name of these pancakes are a mouthful. But I felt like you needed to know exactly what they were made of! I had to stop myself from adding the word fluffy… because they totally are.

These pumpkin protein pancakes are so flavorful, fluffy, and delicious. They’re perfect for a cool fall day or a rainy Sunday morning. Make sure to let me know what you think of this recipe when you make it!

A few recipe tips:

Depending on the protein powder you’re using, you may need to add more or less water.

If you’re choosing a different flavor for protein powder, you may need to add more pumpkin and/or pumpkin spice to enhance the pumpkin flavor more.

Add in extra walnuts or some chocolate chips and you may as well call this dessert.

Vegan Pumpkin Protein Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup vegan vanilla protein powder
  • 2 tbsp baking powder
  • 2 tsp pumpkin spice
  • 1 tsp salt
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 1/2 cups water (more if needed)
  • vegan butter or oil for the pan
  • optional (recommended): 1/2 cup roughly chopped walnuts

Instructions

  1. In a large bowl, whisk all ingredients. Add more water if needed.
  2. On a large non-stick skillet over medium heat, melt a small amount of vegan butter.
  3. Add a large scoop of batter to the pan and cook for 2-3 minutes or until browned on the bottom and the top begins to bubble slightly. Flip and cook for 1-2 minutes on the other side.
  4. Serve hot and top with maple syrup. Enjoy!
