Soft, Flaky, Vegan Buttery Biscuits

Ingredients

  • 1 tbsp ground flax

  • 2.5 tbsp water

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/3 cup plant-based cold butter

  • 3/4 cup unsweetened plant milk

  • 1 cup shredded vegan cheddar

Optional topping:

  • 3 tbsp plant-based butter

  • 1 tsp garlic powder

  • 2 tbsp chopped fresh parsley (optional)

Directions

  1. Preheat oven to 400F. Mix flax and water together. Set aside.

  2. Combine flour, baking powder, garlic powder, and salt. Mix in the cold butter with a pastry blender or fork. Mixture should be crumbly.

  3. Add in plant milk and flax mixture until just combined. Stir in cheddar cheese.

  4. Shape biscuits fairly small on a parchment-lined baking sheet. Bake for 8-10 minutes.

  5. While baking, melt butter in a small pan and mix in garlic powder and optional chopped parsley.

  6. Remove biscuits from the oven and top with melted butter mixture. Bake for an additional 3-5 minutes or until golden. Remove from the oven. Enjoy!
