Easy Vegan Apple Pie

INGREDIENTS

  • Your favorite pie crust (2 if doing designs on top) (gluten-free if needed)

  • 5-8 small/medium apples

  • 1/4 cup butter

  • 1/4 cup + 2 tbsp lemon juice

  • 1/4 cup maple syrup

  • 2 tsp cinnamon

  • 1/2 tsp salt

DIRECTIONS

  1. Preheat oven to 400F. Slice apples thinly using a food processor*. Keep the peels on. It'll come out to a few cups (every pie pan is different and can hold a different amount of apples.)

  2. On a nonstick pan, melt butter over low heat. Add the rest of the ingredients to the pan and mix until well combined.

  3. Stir in the apples until completely coated.

  4. Pour apples into pie crust. Top with pie crust leaf designs, a braid, or a lattice top.

  5. Bake for 20 minutes. Reduce heat to 350F and bake for 20-30 minutes. Let cool for 1-2 hours then serve. If serving the next day, store in refrigerator overnight.

NOTES

*If you're not using a food processor, allow for much more time to slice the apples.
