Fudgy Mexican Brownies

INGREDIENTS

Dry:

  • 1 cup gluten-free flour

  • 1/2 cup oat flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1/4 tsp cayenne

  • 1/2 cup dark cocoa powder

Wet:

  • 1 cup dates, soaked in hot water for 10 min.

  • 1/2 cup sugar-free chocolate

  • 1 tbsp refined coconut oil

  • 1/2 cup unsweetened applesauce

  • 1/2 cup maple syrup

  • 1/4 cup almond butter

  • 1 tsp vanilla

  • 1/2 cup water

DIRECTIONS

  1. Preheat oven to 350F. Line brownie pan with parchment paper.

  2. Whisk dry ingredients in a large bowl. Set aside.

  3. Soak dates. Meanwhile, melt chocolate with coconut oil.

  4. Add drained dates and melted chocolate with the rest of the wet ingredients in a food processor. Blend until smooth.

  5. Add wet mixture to dry and mix until just combined. Pour batter into brownie pan. Bake for 20-25 minutes. Cool before serving. Enjoy!
