Strawberry Hibiscus Refresher

I’m not a huge juice/mocktail person, but ever since becoming pregnant and not being able to order fun cocktails, I’ve been craving a switch up from my water. What’s more fun and summery than a strawberry hibiscus refresher?!

This refresher is able to be strengthened, weakened, and adjusted to your personal preferences.

& hey, if you’re not pregnant like me, you could spike this with some white rum or vodka.

Makes: 2 1/2 qts or 10 cups

Strawberry Hibiscus Refresher

Ingredients

  • 8-12 cups water
  • 2 cups fresh strawberries
  • 2/3 cup dried hibiscus flowers
  • large handful fresh mint leaves
  • 1/2-1 cup maple syrup or agave
  • 2 tbsp freshly squeezed lime juice
  • ice
  • optional: seltzer
  • serve with strawberries, lime wedges, and mint

Instructions

  1. Boil 6 cups of water. Once boiling, add strawberries, dried hibiscus flowers, and fresh mint. Lower heat to medium and heat for 15 minutes.
  2. Remove from heat and smash strawberries. Let it steep for 10 minutes. Pour through a strainer into a pitcher. Keep the pulp to make tea or discard.
  3. To the pitcher, add 2 cups of water, maple syrup, and lime juice. Taste and adjust flavors as needed. If it is too strong, add more water or sweetener.
  4. Add a few cups of ice and refrigerate until serving.
  5. When ready to serve, fill a glass with ice and pour the strawberry hibiscus refresher to the top, or pour halfway and top with seltzer. Top with strawberries, lime wedges, and mint.
