Mint Chip Shake

 

I recently went to the beach and went to a smoothie place. If you know me, you know I have a big sweet tooth, but in the morning (unless I’m eating the whole fruit) I don’t crave that sweet flavor. So I always go for a peanut butter, chocolate, coffee kinda vibe. (Yes, even though I don’t drink coffee!) So anyway, I saw a mint smoothie on the menu and knew I had to try it. I fell in love!

I immediately went home and tried to recreate that smoothie with whole ingredients because I finally discovered another smoothie flavor that I was interested in. Plus, we’re growing mint on our deck and we have so much of it. What better way to use it?

If you’re looking for something SUPER creamy and decadent, try using the full fat coconut milk (it also makes an extra 4 oz of the smoothie). If you want something on the lighter side, use standard cartoned plant milk — it’s still so amazing!

Mint Chip Shake

This nutritious 5-ingredient shake satisfies that ice cream craving with zero compromise.

Ingredients

  • 1 1/2 large frozen banana
  • 1/2 cup coconut milk from carton or 1 cup full-fat canned coconut milk
  • 1 cup packed spinach
  • 1/4 cup packed fresh mint leaves
  • 3 tbsp cacao nibs

Instructions

  1. Add frozen banana, coconut milk, spinach, and mint leaves to a high-speed blender. Blend until thick and creamy. Add cacao nibs and blend for an additional 30 seconds. Pour into a smoothie glass and enjoy!
