10-Minute Vegan Chocolate Mousse

Ingredients

  • 12 oz silken or soft tofu

  • 2 tbsp cocoa powder

  • pinch of sea salt

  • 2-3 tbsp maple syrup

  • 1/2-1 tbsp coffee

  • 1 tbsp corn starch

Directions

  1. Start with the lowest measurements for all ingredients. (You can always add more but never take out!) Blend all ingredients in a high powered blender until smooth and creamy. Taste and adjust ingredients.

  2. Pour contents of blender into a small nonstick pot and heat until it thickens, approximately 5 minutes. Whisk very frequently while heating.

  3. Remove from heat and let cool, store in fridge for a few hours. It will continue to thicken in the fridge. Serve cold. Enjoy!
