Ingredients:
Pre-made empanada dough (Goya small discs are great)
Filling of choice (jackfruit, veggies, vegan cheese, leftovers, etc.)
Vegan cheese (optional)
Olive oil
Directions:
1. Preheat oven to 375F. Prep baking sheet with parchment paper.
2. Follow defrosting instructions and lay out 10 empanada discs.
3. Place 2 tbsp filling in the center of each disc.
4. If adding, top with vegan cheese.
5. Fold over each empanada and seal edges with a fork or fold into a pretty design.
6. Brush each empanada with olive oil and bake for 15-20 minutes.
Notes:
1. Be careful not to have filling spilling out of the empanada or it will continue to do so in the oven.
2. If the empanadas aren’t browning after approx. 12 minutes, brush with more olive oil.
