Makes: 20 brownies
Ingredients:
2 cans black beans (approx. 30 oz)
1 avocado
2 cups brown sugar
1/3 (heaping) cacao powder
1/4 cup pecans
2 tbsp olive oil
1 tbsp maple syrup
1 tbsp vanilla
2 tsp baking powder
3 cups dark chocolate chips
1 tbsp vegan butter
Directions:
1. Preheat oven to 350F. Grease 2 muffin trays (or brownie tray) with vegan butter or olive oil.
2. Melt the 3 cups dark chocolate chips with 1 tbsp vegan butter. See recipe notes.
3. Rinse and drain the beans.
4. Place all ingredients in a blender and thoroughly mix.
5. Scoop mixture into muffin trays.
6. (Optional: Top with peanut butter, walnuts, pecans, raspberries, and/or strawberries.)
7. Bake for 20-25 minutes. Oven time varies.
8. Let them cool before scooping out (unless you like them messy). Enjoy!
Notes:
1. If you don’t have a double broiler, put a 1/2 inch water in a pot. Fill stainless steel bowl with chocolate chips and vegan butter. Place over the hot water in the pot and stir until evenly melted.
