Ingredients:
2 pie crusts (use your fav recipe or buy *ready to roll* pie crusts - use gluten free if needed)
Olive oil spray or 2 tbsp melted butter
2 apples, in 1/4-inch cubes (peeled optional)
2 tbsp brown sugar
2 tbsp vegan butter
2 tbsp freshly squeezed lemon juice (approx 1 lemon)
1/2 tsp ground cinnamon
Pinch of salt
1/3 cup flour
1/3 cup brown sugar
1/2 cup pecans
2 tbsp vegan butter
Pinch of salt
Optional toppings: ice cream, homemade frosting, whipped cream
Directions
1. Heat oven to 350F. Lightly grease 12-muffin tray with cooking spray.
2. Cook the apples, butter, cinnamon over medium heat for 10-12 minutes. Add the lemon juice and stir. Set aside to cool.
3. Mix the topping ingredients in a small bowl. Set aside.
4. Roll out the pie crust and use a cookie cutter or a small glass bowl (approx 5 inches diameter) to cut out 12 rounds from the dough.
5. Press each round into each mold in the muffin tray. Fill pie crusts with apple pie filling and topping.
6. Spray with olive oil spray or melted butter. Bake for approximately 20 minutes.
7. Once cooled, use a knife to take out the apple pie cupcakes from the muffin tray.
8. Serve the cupcakes with ice cream, frosting, whipped cream, or anything else you typically put on your apple pie. Enjoy!
